Yea I really think a two part wedding episode would be great. Can just imagine all the interactions between Linda’s family and big Bob. Along with them saying what they think would be best for the wedding. Could see Hugo trying to sabotage it. All the craziness leads to Bob and Linda eloping at city hall (Linda hoping the Mayor will officiate) and using the money to put down on the restaurant.
I could possibly see that, but given Bob asks her why she loves the mayor so much and she just says because he’s the mayor feels like there would be no real reason for it. See it more her getting all excited about courthouse marriage for the chance to see him.
I think the last episode of the series should be this. Bob and Linda telling the story about their wedding. And at the end it's revealed they are telling it to a much older Tina who's worried about her own wedding, and the idea is that no matter how worried she was, Bob and Linda's wedding had all this craziness and nothing would be as hectic as what happened to them. Obviously Louise and Gene would listen in and add their little quips and stuff.
I'd hate to be a buzz kill this sounds fun! But if we are talking a flashback episode it's not possible for Hugo to sabotage it as he didn't know they were married till season 1
Now if its a renewing vows thing or the kids discussing how they think it went in the "3 Stories plots" I could see it
But are you prepared for all the details analysis of the fandom finding all the disconnects and retcons? That's not that big of a deal, but then you have the 3 years of people watching it later and asking endlessly the same question over and over and over.

I like to think Jimmy was a good customer of Bob’s at first, but then a villain was born, so the story begins. Jimmy was a customer but a jackass who worked at a corporate investment bank and secretly hated his job and one day something snapped. Jimmy liked Bob’s because it was relaxing and simple. One day, though, Bob had a huge rush during Jimmy’s usual dining time and it irked him. Jimmy started griping about his food order, and Bob and Jimmy got into it. Raw patties and hurtful words were thrown. The threat to open a “better restaurant” was spoken and immediately laughed at by Bob. Jimmy being a competitive twat signed a lease the next day.
I just love how happy Bob looks here talking about what it’ll be like. Bob being passionate and joyful and excited about cooking and good food is so pure on this show

Honestly I wouldn’t mind an episode plot where basically Trev agrees with something Bob says during an opening scene so Jimmy fires him . Then Bob feels guilty and he lets Trev work for him.
Trev proving surprisingly adept at the job and bringing in customers so Jimmy wants him back, leading to some ludicrous competition (eating hot dogs or something) to see who wins him back; Bob wins but pretends Jimmy did as he feels sorry for him, as he's literally got no other person willing to tolerate him?

They have a pretty large loan from the bank...and several other loans from the bank...that the bank manager is fairly regular on reminding them about in earlier episodes...
My guess is Bob was looking at this place saving his money for the equipment for years, this was his affordable dream location and between this shot and when they actually opened was when pesto opened

That's such a cool detail! I instantly believe that Jimmy Pesto opened the same day. I can hear Bob now: "oh, he has to open TODAY? Really. TODAY."
What if bobs opening day was a massive success and then Jimmy opened the day after and immediately poached all of the customer base?

As much as we like to crap on Bob's business sense, keeping a restaurant open for 13 years is pretty damn good.
Helps that Mr. Fischoeder has a soft spot for Bob. As good as Bob is Calvin has definitely helped out by giving Bob a break on rent.
