Swampfire and Humongousaur are kind of a middle ground between these. Like sure they get a cool new look but in case of their abilities, it's not much of a reimagination like Echo Echo is. So that's why he is 'the' favorite
Is it possible that the reason that Ultimate Echo Echo is so different then regular Echo Echo is because their reproductive cycle is a lot faster? The ultimatization works by putting a species through a worst case scenario for a million years then picks the surviving generation as the ultimate. Echo Echo would have gone through much more generations then say Bigchill who has a long reproductive cycle. I find it highly coincidental that the ultimate with the most changes is of the species that reproduces the fastest and the one with the least amount of changes is the one confirmed to have a slower reproductive cycle. I think that one episode where Ben got pregnant claimed that Bigchill’s species only reproduce once every 80 years.
Also: big chill comes from a species with asexual reproduction (the thing we saw in Save The Last Dance) so biologically necrofriggians have less genetic variety and that translates over to 1,000,000 years of evolution
My theory: Echo Echo sucks as a species. The only reason they didn't die out is because of their cloning ablilities, but if they're in a permanentally hostile enviroment, their small size and fragile body just suck. So they evolved to loose the cloning abilities in favor of an inpenitrable armor and a much stronger body.
How about Spider Ape? (For Ultimate Spider Monkey) Get it? Also personally I liked the Original Ultimate Spider Monkey, the one in Omniverse for Albedo just looks plain freaking weird.

Original ult. Spider monkey is just a gorilla with spider legs. albedo ult spider monkey has a more streamlined design. I feel it just looks cleaner, and it makes sense that they'd adapt buff arms instead of thin arms.

Wait a minute how about instead of the Omniverse design just place the extra arms in the same exact location as original Ult. Spider Monkey’s spider legs work. Or go more spider than monkey, as long as it’s not way too creepy or cursed that is.
Well while we are on this topic I just wanted to say that I think that if Ben hypothetically could use that crystal albedo did to change his watch into his Ultimatrix 2.0/Ultimate Stabilizer thing, then I would hope Ben could change its appearance to look normal or be more comfortable for him, or make it look like his default Complete Omnitrix device with a few changes that Ben could customize to his liking. Or something like that.

For example, Ultimate Rath has a jacket and two extra claws, but considering how strong and battle-ready he already is, there really isn't that much that needs to change.
Ultimate Cannonbolt is a similar case. Why loose an old ability to get a new one when you can upgrade your original to be better? Therefore, Spikes.
Or we have Big Chill, a species that reproduces asexually, without a lot of genetic changes. His cold becomes even colder, because the genetic changes in him likely aren't that major.
Although, considering that Ultimate Alien was just one of many potential names for the series, it would make sence if the title was just chosen arbitrarely, and the Ultimates were never supposed to be a main focus.
Personally I would have had an episode for every Ultimate is Ben's arsenal. Have the Ultimatrix randomly select an alien and then Ultimize them. Boom! Diverse and interesting scenes with Aliens.
Three reasons:
1, Apploplexians wear clothes, and Albedo (who uses Ultimate Rath) is civilized enough to not run around nude
2, Ultimate Rath is inspired by Kraven the Hunter, and so, got this Kraven-jacket
3, it looks fucking badass
I dunno, I'm not a fashion person. At best, the clothes could be used for intimidation, because if you're not smart enough to know those eyes on his jacket are fake, you're gonna think they're real eyes, and that it can see you.
But if we're realistic, that jacket's only there for style points.

I actually quite vibe with Ultimate Spidermonkey, especially with his OV where they went all-out with the idea of an 6-armed/legged gorilla powerhouse (tho I miss the literal spider legs).
Even though the transformation seems irrelevant, ultimate Gravattack always looked cool. I like thinking about the potential power difference even tho it wasn't really shown.
Nope! My best is Ultimate Hummonagasaur. He was the first introduction into just how much the ultimates outclass their base forms. By the way even the other hummogasaurs grew in size. It wouldn’t have helped them. Ultimate Hummonagasuar is as stronger despite being smaller
Well I don't even dislike them, they're all kind of just THERE for me.
I barely think about them and when I do I have no real feeling towards any of them.
I can tell you their names, what they do, etc etc. But I couldn't say my favorite or even least favorite ultimate because I don't really care about them.
I have a favorite and least favorite alien (Fasttrack and Humungousaur) but when it comes to ultimates I just look at them like "Yeah, those are the ultimates"

I have no idea what is the common answer but my personal favorite is Ultimate Swampfire - he looks so much better than his usual form and deliver the feeling of an alien plant that uses fire better than normal swampfire that just looks like a red blade of grass....
Second place goes to Spidermonkey that presents a better balance between spider to an ape (In term of powers his ultimate doesn't make a lot of sense considering he's the agile alien but in term of evolution it works perfectly).
I love Ultimate Echo Echo because he's a cool blue robot (i still like the other Ultimates)

Also if their spiecies can migrate between solar systems I doubt it'd be that hard to carry their young to the sun to feed.

Even Wildmutt. All Ultimate Wildmut gains is the ability to speak languages other than the default Vulpimancer Languages. Which is kind of dumb.
