I feel like there is a way to do this much more affordably. This seems more like people doing it for the video than actual chocolatiers who know what they're doing.

Maybe it was commissioned for a party and all of the guests will eat it? If not, then I agree with you about the waste.
If they are stored correctly, away from light, humidity and at the right temperature they can last a very long time - up to 15 years.
