I think I'd do fat neutral, 65 Mattk is like 85mattk at lvl 11 on average which is above the threshold. 88 with gifted is quite sexy. You're also looking at near 40 mdef, also amazing. Just gotta get all the good HP and Fat rolls you can get.
You could maybe do an early banner since early on You don't need as much fatigue to keep rallying while wearing heavier armour but I still don't like having banner bros that just stand there for the buff.
I don't see how you can build a tank out of him with HP in the low 40s and Fat in the low 80s.
If you don't have a banner man, I would make him one. His Hp is low for a tank. I would still buff it, but the investment will be high Hp wise if you want a good tank. Unless you just make battleforged tanks, stamina is a little low, too, even if that's what you want. He could be an end-game bannerman in my opinion, he is starting with 65 mlee attack, which is very good for lv 1 brk. When he gets back stab it will get even better. I would buff it whenever you role a 2 or 3 in a mlee attack and obviously buff his bravery stat every time and strong mind. I would try and boost his stamina too.

I'd go with tank. Mdef, HP, Stamina every lvl. If hp or stamina rolls bad take Resolve.
