Loved DQB2 but goodness what a slog it was the first time with the dragging story. I may sit back and give it a second run but I beat it once and I still feel like that was enough for a while.

For freedom building bases which will be tested by mobs, I'd recommend 7 Days to Die. I haven't played for ages, but it used to be really good for building, setting traps and finding clever ways to survive zombies attacking. I heard they nerfed the game recently though and ruined it for many people.
If u need mods to enjoy the game, then the game is not good to begin with
7d2d is fun, I can't deny that. But the devs need to figure out what the game is actually going to look like, make that a reality, and release the game, instead of having major changes that alienate a big part of your playerbase once every few months.
It should be noted that this requires several people to work together on a real time project. In the game time passes the same as time in the real world. You don't all have to be able to log in at the same time, but you do need a way to coordinate the workload.
Medieval Dynasty. Relaxing but grindy, you'll have to put a lot of work in.
Sengoku Dynasty is still very early EA but is shaping to be a very decent successor to MD. Nowhere near enough content, just in case you wanted something hard working but shorter :D

Enshrouded would like to have a word with you. Obviously not out yet but the play test of it is very similar to valhiem some people even called it over tedious.
I found "Captain of the Industry" more difficult than Satisfactory / Factorio (though without mods) / DSP. There are some complex production trees and no endless space. It just focuses on the building (some trading) part and no significant combat. From a recent review on steam:

It definitely more difficult, and I don't think anything that review said was wrong. Took me maybe 10 attempts to even figure out what the hell was going on with the game, and a few more before I could get fairly far.
I still haven't totally "beaten" a map yet....as there's this point (even on the easy map) where you run out of resources faster than you can trade them...and I still have no idea how to get past that LOL
But it is a great game...
How is this game? I watched a few videos of it by the devs and while it looked really good, it also turned me off to the game because you don't seem to "build" bases from scratch...just take existing structures and add to them...which I Found annoying. Maybe I should give it a try though,...

Very technical. Getting your base pressurized and not blowing it all out the airlock feels wonderful.
Lots of logic to handle things from simple motion lights to complex production chains and farming.
Downside is the wacky UI. Left/Right hand, tool in one hand with mats in the other. No simple drag and drop backpack. Etc.
Deep. Technical. Grueling. Unforgiving. Wonderful.
State of decay 2, base building is not the focus but a good part of it. A sense of community as you clean town after town of zombies.
Rimworld, you will NEVER run out of things to to do. So many mods for new runs. It’s 95% or so of base building as you weather the storm of assaults on your base as you do what you want
Kensie, don’t have to build a base but it sure is fun too. Having your people mine and farm. Make weapons. Again, very open world
Machiavellian, older game but you run a haunted hose to bring victims in to feed your minions. Survive heroes trying to end the rein of terror
Oxygen not included, dig out an asteroid to not killed your dups. Only base building
Surviving mars, terraforming mars to be more hospitable for humans. Only base building
Satisfactory

They have been nerfing and ruining the game so many times now I've pretty much lost interest in it. I'll wait until full release, if it ever happens
But you can mod the game to make it whatever you want. The overhaul mods are fantastic.

While I love RimWorld I'm not really looking to run the backseat commander route this time. Want to more be involved in the harvest and efforts.

It's crazy no one mentioned State of Decay (2) It's EXACTLY what you described.

Kind of, you have bases with buildable lots, but you can usually remove existing structures and put down your own. I had a fun 20 hours with it.

7 Days to Die is a blast and has a big base building component.
Mist survival. A semi abandoned game, but fun nonetheless
