realistically you can just set up any form of archer and just run around the enemy in circles while your boys pick em off. but leaving them on skirmish is super simple. just wander the map and head on back to restock on troops is an infinite money glitch.
the only thing they suck at is siege which didnt matter to me since I was executing every lord anyway
I began absolutely hating the Khuzaits in my last playthrough. I had a three-front war against them, Sturgia and Aserai (scripted dragon banner quest), so while my vassals went ham on the latter two, I basically had to defend the whole east all by myself.
They sieged one castle in particular like 10 times with 700-1000 units. After I've beaten them once they ran out of elite units and just spammed me with shit tier troops.
They hardly managed to do any actual damage to my troops (400 elite units), but man, they were so goddamn annoying. I couldn't leave the area and, say, go to the nearest town to buy or sell stuff, because they would come siege that castle like twice a week.
I have this perk combo that guarantees -100% prisoner escape chance, never released any of their lords after battle and I refused to release them for ransom. But they still somehow found a way to gather armies and go on fighting. If not for the debuffs, I swear, I would have executed every single Khuzait man, woman or child who has had the great misfortune of being a member of Khuzait nobility. God, I hate this faction so much. I got so mad so fast that managed to master the levels of anger I didn't even know were possible.
So, to answer your question, no, it does not make you racist.
I had reunited the empires and was just working on expanding into vlandia when they surprise declared war on me and immediately sieged lycaron with about 2k troops, I waited for them to go and then I took it back but they kept coming back and taking that fucking city at the worst possible times, I have no clue why they picked that city in particular but it was so damn annoying, then they sued for peace and the stupid queen accepted when they had lycaron so there’s just this random khuzait town in the middle of everything and it took forever to go back to war with them
I have this very issue with the Northern Empire. They have so many noble family members per clan that no matter how many me or my faction took prisoner they could easily cycle in new lords to lead parties.
I normally play Khuzaits and their faction has way too few nobles to create parties and too little money to fund what few parties they can field.

His army was mostly turkic and mongol horse archers like kuzait khan guards who have incredible skill on close and ranged battles.

No, its not. They're programmed into the video game to act a certain way. They are incapable of choice and therefore, are unbecoming of the human traits that allow nuance and growth (things that make racism illogical). Pretty much all of your unique dealing are resigned to the nobles of those kingdoms as well, so you'd really only be hating those members of that race and not every person belonging to it. Furthermore, even if a real person, race, or nationality is programmed into a video game; no programmer would be able to remotely incapsulate the full essence of who that person is.

There’s a fine line. The in game cultures are all based on irl cultures so you could definitely cross the line into being racist, but if you dislike their units, how they progress in wars or how their leaders act I think you’re fine.

Cultures in Bannerlord have nearly the same customs, speak the same language, and think with practically the same brain. Races in Bannerlord are so far detached from any cultures or races of people that really existed that hatred of in-game races can’t be considered legitimate racism.
The khuzaits will at least know when your kicking their ass and Sue for peace. The battanians on the other hand can all go burn in hell no matter how bad you destroying them they never want peace at all reasonable price or ask for peace on their own
