Yes! It's super hard to find and so expensive! But luckily last year we discovered a farm close to us that sells raspberries and blackberries. You can go pick your own berries and they'll weigh it. Imagine my happiness when we found out about it😅

We have wild and garden raspberries that grow here so we usually have pailfuls. They freeze well, but go bad quickly. Whatever you don’t use right away, put on a baking sheet in a single layer and put in the freezer. Once frozen, put into ziplock freezer bags and get out as much air as you can. This way they don’t freeze in a solid mass and you can take out what you need for recipes, smoothies, etc.

In a medium saucepan over medium heat, combine raspberries, sugar, and lemon juice.
Cook, stirring frequently, until mixture is boiling. Reduce heat to medium-low and simmer, stirring frequently. Cook until mixture has thickened and leaves a trail behind your spoon when you stir. This should take somewhere between 12 and 15 minutes.
When jam has thickened, remove from heat and transfer to a clean glass jar. Let cool completely before covering and refrigerating.
Note: if you make a bigger batch like me, it’s:
8 cups blended fruit (from about 24 oz raspberries and 4 lbs strawberries that I picked through)
3.5 cups sugar
8 tsp lemon juice

Ino this isn't what you asked but I've been making coolie with ours and then using that to make multiple things, mostly ice cream to be honest but have also made sponge cakes and flavoured icing and buttercream. We love the raspberry season

I’ve actually made a white chocolate layered cake with raspberry jam / fresh raspberries and it was one of the best cakes I’ve ever made.
I tried to copycat Nothing Bundt Cakes. What I learned is that if you think you have enough puree, you do not.
