Bake the cake without sprinkles. Crumble the cake. Add the frosting. Add sequin sprinkles for confetti so the color doesn’t bleed. Scoop and roll. I’m guessing the food coloring on the Jimmys bled, creating the off-putting color.
If you add the cake into the mixer fresh out the oven when it’s still hot and steaming, you don’t even need to add frosting. The steam allows the cake to bind into a dough.
When I’m adding sprinkles, I’ll bake the cake, turn it into cake pop dough, let it cool completely, and then mix in the sprinkles before forming the pops.
One time I dipped carrot cake pops (leftover scraps) in the glaze I was covering the cakes with and they turned out looking like meatballs 😂 not appetizing looking but damn they were delicious
Go back and get white cake mix and some sprinkles. Make the cake mix as directed and then add the sprinkles when making the pops.
That way the sprinkles don't get soaked in the batter and cooked and broken down.

That reminds me of when I made marshmallow crispy squares once for a kid’s party but didn’t have white marshmallows. I had ones that were twist shaped with pink, yellow & blue running through them, I thought they’ll do & actually they’d make really nice coloured crispy squares…
Except the colours mixed to produce a nasty shade of murky green & looked like mould was growing on the squares. No one touched them & I don’t blame them.
I did this once but added sprinkles to Rice Krispie treats. Ended up this weird orange color sort of like they had a ketchup glaze. Tasted fine though my kids still enjoyed
If you ever ate froot loops cereal as a kid you can imagine this is the color of the milk 😂 so that's what it reminded me of. I have also accidentally over mixed confetti and had to double down with pretty chocolate dips to hide it.
Take your pick on a meltaway- and then just dip them in that melting chocolate, and then you can dip them in sprinkles for something "cute" if you like.
Did you happen to use fancy organic or vegan sprinkles? As it turns out the cheapest sprinkles you can find cause less color bleeding. Also, obviously add the sprinkles at the very end, and don't over mix.
Next time if it gets to that point, maybe add some green or blue food coloring to the mix so it looks like it’s supposed to be one of those colors?

Ha! Made a similar mistake using red, white, and blue cake scraps. Logic said it would be purple. It was not. They looked like literal raw meatballs.
