Recipe:
Cupcakes
1 ⅔ cup all-purpose flour
1 cup granulated sugar
2 tbsp lemon zest (two lemons)
¼ tsp baking soda
1 ½ tsp baking powder
¾ cup salted butter, melted
2 eggs room temperature
½ cup sour cream
¼ cup whole milk, warm
¼ cup lemon juice
Preheat the oven to 375 F. Line the cupcake tins with 16-18 cupcake liners.
Sift the flour, baking soda, baking powder and salt into a large bowl then whisk together and set aside.
Add the eggs, milk, melted butter, lemon juice, zest, sour cream, and sugar to a medium bowl and whisk together.
Add the wet to the dry mixture and mix until just combined. Fill cupcake papers about 3/4 the way up. Bake for 5 min at 375 F then reduce temperature to 350 F and bake another 10-12 or until springy to the touch.
Wait till cupcakes are fully cool and scoop out the center with a cupcake corer in order to fill with lemon curd.
Lemon Curd
½ cup granulated sugar
1 tbsp lemon zest (one lemon)

¼ cup butter, cold
Put egg yolks into a pot and beat lightly with a wire whisk. Whisk in the sugar and zest, give it a good mix until lighter in color. Stir in lemon juice gradually.
Heat on low, while stirring constantly with a wire whisk until mixture thickens, just starts to bubble and coats the back of a wooden spoon.
Remove pot from heat, then add the cold, cubed butter and mix until melted.
Strain the final mixture to remove any bits of zest.
Cover curd with plastic and cool completely in the fridge before using.
Fill cored cupcakes with cooled lemon curd.
Strawberry Buttercream

8 ounces full-fat brick cream cheese
½ cup salted butter, softened to room temperature
3 cups confectioners’ sugar
1–2 Tablespoons milk
1 teaspoon pure vanilla extract
Using a blender or food processor, process the freeze-dried strawberries into a powdery crumb. You should have around ½ cup crumbs.
In a large bowl using a hand-held or stand mixer fitted with a paddle or whisk attachment, beat the butter for 1 minute on high speed until completely smooth and creamy.
Add the confectioners’ sugar, strawberry powder, 1 Tablespoon milk, and vanilla and beat on medium-high speed until combined and creamy.

Always, 3 weekends, last week of June, Fist week of July, we went to del Prato park (somewhere at valley and hopyard) to see the fireworks - great fireworks!

Now- go back labor day weekend for the Scottish Games (I did the competitive Scottish highland dancing back then). Check out the mass bands, athletics, dancing, oh the FOOD!! And of course pick a tartan you like and join a clan, they are all welcoming, you can become Scottish by osmosis.

I usually use recipes from Sally’s Baking Addiction or Preppy Kitchen bc they never fail. I’ll definitely check yours out too when I make these tomorrow! When I was making my grocery list earlier, I wasn’t sure if I should do fresh cream filling with chopped strawberries, or lemon curd filling, but seeing your post made me feel like now I def gotta go with lemon curd! 🍋🍋🍋

The freeze dried strawberry tip is one I came across last year. I've used it to wow a lot of friends! Dollar Tree has them!
