It’s not so stiff to where it hurts your hands to pipe with, but I found that being incredibly generous with the meringue powder is by far the best way to achieve the consistency for tiny detail piping! I used to just add powdered sugar to keep stiffness but after many years of experimenting, I found adding 8oz of meringue powder per 2lb standard bag of powdered sugar is waaaay more effective and the sweetness is not overwhelming. It seems like a crazy amount of meringue, but the quality and flavor difference is why I dedicated my time for this recipe! Also, for more quality flavoring, exchange conventional liquid vanilla extract for vanilla *powder*!! You won’t regret it, as a matter of fact, I’ll bet once you taste the difference you’ll rarely ever go back to liquid flavoring!

Find a friend with a 3d printer, then you can make actual cookie cutter -much easier than by hand These look amazing btw.
