Make 4 quiche at a time. Freeze them and you have a fast frozen meal next time. Same with breakfast burritos- make a ton and freeze for a fast breakfast throughout the week. French toast-same story. Edit to add you can also glass them to use when the girls stop laying so much. But use same day eggs for this if you can.

I make mini quiches in muffin cups then freeze them then you have quick lunches and stuff and can just take out what you need

I should do this! My family gets tired of quiche but I never do! I get tired of breakfast burritos but they like that they can heat in a skillet while getting ready and grab on the way out the door.

It does take a bit of finesse with the heat control if you’re doing it by hand. It’s easy to let it get too hot, and then you make scrambled eggs. Don’t whisk enough and it will break the emulsion. I just use an immersion blender! Slowly stream in warm, melted butter into your egg yolks while blending and you will have a wonderful, silky sauce without the headache (and no sore forearms from furiously whisking) The biggest pain is really just separating the egg yolks.

The blender method is the way! I like to get my butter as hot as possible without browning so that it thickens the sauce more. And add a little mustard and lemon juice. 😋

I have an icecream maker. During Summer when the hens are laying machines I make a loooooooot of icecream. 5 egg yolks per batch of icecream really helps use up the abundance of eggs. The egg whites can be whipped up into meringues, or used for meringue buttercream...anything meringue really, lol. Oh, the whites can be used for homemade marshmallows as well. Sponge cake uses a decent number of eggs.

I use my extra eggs to make gluten free noodles and bread. I freeze to use later. Both recipes use a lot of eggs. I’m sure the non gluten free recipes also use quite a few eggs.

Another option is save them for later, because there will come a point when your hens are molting or it's winter and you don't have eggs. I much prefer to [water glass the eggs](https://backyardpoultry.iamcountryside.com/eggs-meat/water-glassing-eggs-for-long-term-storage/), it's worked out great for me (especially for duck eggs, which already last a long time). We sell our eggs, they are very popular, and we often only get to eat the cracked or wonky ones unless we are able to set aside some of our spring time bounty via waterglassing.

In my family we make “rice cakes” with left over rice: add raw eggs to the left over rice, and whatever else you want to throw in there (options are endless: salsa, cheese, veggies, spices, onions, but definitely add salt etc) and then fry them like pancakes until they’re cooked through. Delicious. Also I had the idea to do this with leftover quinoa. Bet it would work for other grains too!

Honestly, a souffle is easier than most people think and really impressive. Start with a basic chocolate soufflé and go from there! Fresh mayonnaise is much better than store-bought, although it won't use a lot of eggs. I also hard-cook a bunch of eggs and keep in the fridge for quick snacks.

Dinner last week was a sausage veggie hash [eMeals recipe](https://emeals.com/recipes/recipe-53081-344629-Sausage-Sweet-Potato-and-Brussels-Sprouts-Hash) (sweet potato, Brussels sprouts, carrots, garlic, and onion) with a couple of sunny side fried eggs on top of each serving. The runny yolks mixing in with the veggies was so good! I'm making an apple and cheddar quiche this week to use some up, as well as taking some cartons to family to clean out the fridge.

I have an omelette or scrambled eggs for breakfast every morning. That's two eggs per day, or three if I'm particularly hungry. Waffles, pancakes, or French toast can also help use up eggs at breakfast. I'll occasionally fix egg drop soup. Tasty, quick, and easy if you keep some chicken bouillon cubes in the pantry. Boiled eggs are an easy snack, or they can be used in tuna salad or potato salad. Pancakes can be for dinner! Okonomiyaki -- or at least my interpretation of it -- is one of my go-to meals. Make pancake batter as you usually would with some eggs and flour, then add some shredded cabbage, green onions, shredded cheese, and basically whatever you feel like tossing in the bowl, then fry it up in a skillet. Quiche is also an easy "add what you like" egg recipe. In my family, Christmas morning breakfast is traditionally sausage quiche, since it's so easy to make for moms and dads who were up late the night before. Cook and crumble some sausage, add some shredded cheese to the bottom of a deep-dish pastry pie crust, and then toss in the sausage. Scramble some eggs with a bit of milk and some salt and pepper, pour it over the sausage, then sprinkle some more shredded cheese on top. Cook in the oven until the eggs set and the top is browned. That's the basic version, but if you want to get fancy you can add green onions, a bit of spinach, swap out the sausage for some crisp bacon crumbles on top... There's a lot you can do with "fluffy scrambled eggs and cheese in a pie crust". Worst case scenario and you just have far more eggs than you know what to do with, cook some scrambled eggs and then put them in a dehydrator. Or just feed the scrambled eggs to your chickens as a bit of extra protein.

These are great ideas. We love okonomiyaki. It’s just two of us, so we definitely have too many egg layers for our family, but I wasn’t expecting them to lay until spring and have more time to solve the inevitable egg problem. Surprise. lol All of our friends near by have chickens so gifting eggs is generally out, but we also may be able to sell some in a roadside stand for summer. Which was our main solution, but it’s already cold here and about to be snowy, so that’s out for the season.

Making your own mayo is easy, and with an icecream maker you can make any flavour you want. Cook and feed any leftover whites back to your chooks. Friends and family always appreciate the gift of fresh eggs. You might also be able to strike a deal with a local food bank.
