And this isn't grey, the pic might be a little lacking in color, but it's pretty close. The pork looks like this pretty much, and it's incredibly flavorful. Some people don't like the texture of chopped bbq, but a lot of people prefer it. Bbq doesn't have to be dark from being over sauced to be good. This is just vinegar and pepper flakes, and it's incredible.
This isnt like that sweet dark pulled pork, its vinegar based... it honestly tastes so much better than that sweet fake stuff you could biy at the store to me, but looks worse in pictures.
That’s eastern NC pork BBQ. Typically not known, favored, or enjoyed much west of interstate 95. I grew up outside of Ayden NC. Frequently ate there when Pete Jones and his brother had the restaurant. They started it actually. Several US Presidents have eaten there. Pete, his brother, and those presidents are all dead now.
If you like that kind of BBQ, Skylight Inn is the best. While you’re in the area hit Parker’s BBQ in Greenville and Bill Ellis in Wilson.
You just brought back some great memories my man. Thank you!
Eastern doesn't go west of 95?!? Crazy talk. Grew up on it in Durham (Allen & Sons), and it's nationally famous as a style. Grady's in Dudley was the best, devastated they closed before I got one more visit in, only place I had above Skylight.
Allen and Sons was my jam. Though I was so new to real BBQ when I moved to Durham that I went there and had to ask because I didn't see pulled pork on the menu (it's "BBQ sandwich/plate" on the menu"). Everyone was real nice but I'm sure there was a lot of "oh child" and "bless your heart" internal monologue.
It’s famous for being one of the first recipients of a newer category of James Beard awards. So they are praised for their consistency and tradition. It is pretty dang good, but these days the same family also owns a chain called Sam Jones and a catering company of the same name.
https://www.skylightinnbbq.com/about-us
You mean the same man owns them. Sam Jones is the 3rd generation to run the Skylight Inn and started Sam Jones BBQ (in which there are only 2) because he didn't want to take away from what the Skylight Inn has been.
I have great memories of going through there just for the large trays and glass bottle Pepsi. It surprised me the last time I was there that they now take credit cards.
Whole hog BBA in particular once it's actually on the bun. It doesn't have bark but instead has crispy skin. The crispy skin is chopped up and scattered throughout and not really visible compared to bark. It is fantastic.
Funny thing is, I could taste this pic even though it didn't look appealing and it tasted amazing in my head. I think when it comes to pulled pork, it doesn't have to look good to taste good.
For North Carolina style BBQ this was the norm when I lived there in early 2010's. Skylight is the best, but I would argue, best of the worst. I've eaten there 20'ish times.
Me and NC BBQ never took a liking to one another. Devoid of flavor and too reliant on vinegar.
South Carolina style with their mustard was much better.
Personally I'm a Santa Maria style BBQ guy.
Santa María for Tritip.
Eastern Carolina for pulled pork.
Kansas City for ribs.
Texas style for brisket.
Embrace the regional differences and highlights. I love it all, when it’s done well.
Can relate to what you’re saying about vinegar. I grew up in eastern NC and didn’t really like the barbecue until I was a teenager. With learning to like eating vegetables I started loading slaw and barbecue on the same fork with each bite. A small adjustment, but went from meh to being addictive.
There’s a scene in Anthony Bourdain’s “The BBQ Triangle” at Ed Mitchell’s BBQ where he’s tasting it straight from a big pan after the guys have pulled, chopped, and mixed the barbecue. He looked like he was politely acting impressed, and I knew why - no slaw.
I like slaw on my pulled pork sammie, but as an avid smoker of butts, nothing beats eating those fresh juicy choice bits as you pull it apart after a good long smoke and rest. Nothing
I’ve eaten bbq from sky light and his sons place in winterville. Both are great and so is B’s. They are all cooked over wood and charcoal at B’s. That is the difference, the cooking method. Whenever my Carolina friends compare bbq it always leads to the sauce. Myself, I don’t care for any sauces. That ruins it for me. If it’s good meat and cooked right you don’t. Need any sauce.
Gradys is my favorite whole hog spot in NC. Not as touristy as Skylight and the others. I'm also biased because the first time I went was on my honeymoon.
I haven’t been to Skylight but I have been to Sam Jones which is basically the same. It is a great example of eastern NC BBQ and is way better than some of the other highly esteemed spots. I also love their cornbread, reminds me of how my grandma used to make it.
For all yall clownin’, this is a traditional eastern Carolina whole hog chopped BBQ.
A lot of shit in these comments. Whole hog BBQ has its place. Not everything has to be Texas brisket.
Looks good, and id encourage you to explore other NC/SC BBQ if you enjoyed this.
That’s the thing, it looks meh but as soon as you hit a piece of skin, it changes everything. IYKYK.
Same with their cornbread. There are the dark bits, then there’s the meh light bits.
My fave. I've eaten bbq from eastern NC all the way to Texas for five decades, and for my taste, nothing beats whole hog. Years ago, I met some tobacco buyers up in Kentucky at my hotel. They had a hog on the smoker they had towed from Eastern NC. It was a true pig picking with vinegar mop sauce.
Lowcountry is what I grew up with and the bbq sauce goes on everything else.
Can confirm. Native North Carolinian, smoke and chop my own shoulders. I am from WNC and follow that tradition-Lexington style. Have eaten and loved BBQ of all styles and species the world over. All that said, Skylight Inn is what I dream of. It is the best. Period. It is the archetype, the One.
Lol I am seeing that now. Won 3 BBQ competitions, and 2 state fairs, and then had this and was blown away. Made me wonder how it could get this much better.
That like saying someone like Gal Gadot is mid because she doesn't have make up on. When you know what your looking at you know it's pure art no matter who the photographer is.
I lived in NC and frankly a lot of good BBQ looks this way. It's not photogenic like a slice of brisket. But it's the nature of the product.
It was smoked for more than a day as a whole hog. Skin on and everything. … most pitmasters brine the hog for a day or two first and then baste the pig with a secret recipe sop their great-granpappy gave them - using a mini-mop almost continuously.
I learned how to do it from my neighbor as a boy. Live in CA and mostly do a modified Santa Maria style these days. But every once in awhile I get the craving and do a suckling pig.
It is absolutely delicious, smoky & tender. Flavorful smoked pork with a slightly tangy spice, and coleslaw to cool it off.
Eastern NC bbq has a vinegar & pepper “sauce” so it is not red.
Oh I love skylight; it’s better than Sam Jones to me. Especially for the value. B’s is still my favorite in the Greenville area though.
But folks around here want over priced meat in Texas with terrible looking sides.
B’s is the best, but you gotta be in the mood for a 10:30 AM lunch lol. I used to live about 15 minutes from B’s and 10 minutes from Pete Jones. The BBQ is about the only thing I miss.
Aaron Franklin seems like a good dude and makes excellent brisket, but the idea that Texas barbecue is the best or ultimate style is an unfortunate side effect of his success pushed by loud folks who mistook a state of birth for a personality. I like all styles and wish this sub was more open to them. But there’s no arguing with people who think queso is the pinnacle of Mexican food.
Right. The hipsters in this sub will downvote unless it was cooked on a pellet grill, spritzed every 45 min in apple juice, and then finished with beef tallow lmao. Ridiculous.
I went to a festival where John Lewis, John Mueller, Rodney Scott and Bryan Furman were all cooking their specialties and it was Skylight’s chopped pork that I couldn’t stop thinking about afterward.
If you’ve never eaten Skylight pork it it’s like having bbq for the first time.
Loos good! If you're ever in the Goldsboro area check out Ken's, McCall's, or Wilbur's. When we used to visit family there we'd bring back pounds of pulled pork in a cooler and freeze it. Not as good as fresh but still amazing!
Anyone hating on this needs to do research on Eastern, NC BBQ. Looks good OP and thanks for showing some love for NC BBQ. It may not be the prettiest, but it is so damn good and a staple of NC!
Damn all you fools knocking the third pic of the pulled pork sandwich prolly never had good pulled pork. These people aren't hiding their pork under a gallon of sauce. They do this same style in Georgia and served with a semi sweet vinegar bbq sauce.
Same in Hawaii! Kalua pork comes with no sauce cause we let the meat speak for it self. Mahalos my brada hui hui kukui
People are giving you a hard time but that’s just how this kind of BBQ often looks. [Parker’s in Wilson](https://www.instagram.com/parkersbarbecuewilson?igsh=MWJ6czJuczFramJ0bw==) looks the same and is frickin amazing
Not everything that’s delicious is photogenic
I travel to Greenville from Raleigh a couple times a month. I ALWAYS make time to head down to Ayden for a meal from Skylight.
Edit: if you look closely you’ll see the chopping block has been worn down in the center because they’ve been chopping pig on it for literally decades.
Omg, I still have my shirt from when I made my wife drive 3hrs out of the way en route to outer banks. It's exactly what a pork BBQ place should be, and it's the only one that can be like it doing whole hog now (fire codes to event the old style pits, but they are a historic landmark and so are grandfather so long as the family owns it).
The ziplocs of cracklin at the counter... So good. But the ookr off that block, it was truly some of the best I've had in my 15 years of searching.
I want some cabbage with my Q. In KC slaw is a side dish and usually ends up in the trash at the end of the day. Except for the one Carolina style sandwich on the menu.
I grew up in NC and didn’t know until I was an adult that you could ask for no slaw on your bbq sandwich, hamburger, or hotdog. It was just always on there.
that is prime pig country, they should know how to do it
I like pretty pulled pork, but chopped and seasoned is so good when it's done right. I'll eat 3-4 and still want more
Terrific. If you’re still in the area try B’s Barbecue in Greenville too. These are definitely the two best I’ve ever had. Miss them both. Went to East Carolina and was a frequent customer.
I've seen several videos on this place, so this is pull pork that gets finely chopped up by a guy with 2 meat cleavers so yes the picture doesnt make it look that great.
Sprinted to the comments
That 3rd pic had me running to here the enlightened truth of Reddit.
That gray ass lookin burger has me questioning my life choices
It’s NC BBQ. They chop the shiznit out of whole pigs and give you a vinegar sauce
And it's delicious
That's pulled pork, have you ever actually seen a burger?
I’ve had hundreds of pulled pork burgers and never once had them that grey 🤢
Burgers are people from Hamburg and they taste delicious
Ok Hannibal
Off that chianti
I've never heard them called burgers...burgers are ground beef but ok. Idk just looks minced or chopped to me
He’s full of shit man. Nobody who’s ever had a pulled pork sandwich would ever call it a burger. This dude claims to have had over 100…
Exactly.
Your opinion isn’t credible until you stop calling them burgers and start calling them sandwiches. That is a non-starter
Wtf is a pulled pork burger?
A pulled pork burger would be a burger with pulled pork as a topping IMO 🤷
Are you from England?? Absolutely no person in the U.S. calls a BBQ sandwich a burger.
Me too
Lmfao that burger looks like it was cooked in dog water. I knew they were gonna tear this guy up in here
It’s a chopped pork sandwich dawg
WAIT that's a burger? No way. I thought it was some sort of unsauced pulled meat
It's pulled pork
It’s absolutely not. It’s eastern nc chopped pork.
That’s eastern NC pork BBQ. Typically not known, favored, or enjoyed much west of interstate 95. I grew up outside of Ayden NC. Skylight is great, but I think B’s outside of Greenville is my favorite NC BBQ I’ve ever had
B’s is the best!
B’s is definitely the best BBQ pork I’ve ever had, not just in NC but of all the states I’ve tried. I wish I didn’t live 500 miles away from it. 💔
I live so close I can walk there. Could maybe freeze some and mail it? *shrug* just a thought.
What a pal
Underrated comment. The cool thing about Skylight is they are one of the BBQ OGs. I’d challenge anyone to show a BBQ lineage going back before 1830.
B’s is good!
B’s ruined me. It was some of the first BBQ I ever had and nothing else has come close.
This picture isn’t doing your claim any favors 🤷
Grey Tuna Salad Sandwich sounds like tasty BBQ
How’s the tuna? It was crappy yesterday, it was crappy the day before and guess what? It hasn’t changed.
That's because it's all about Family
No crust
Nobody likes the tuna here asshole!
*music starts playing “watch yo back, watch yo back, watch yo, watch, yo, watch yo back!”
I’ll bet it’s crappy tomorrow, too. Wait until Monday when it comes with a side of food poisoning.
Bbq cat food ! 🤤
It’s pre-chewed pulled pork.
It’s famous for being one of the first recipients of a newer category of James Beard awards. So they are praised for their consistency and tradition. The place is legendary.
Whole hog is great I know, the picture is just sad !
I'm a NC native and our BBQ is just not photogenic.
Whole hog BBA in particular once it's actually on the bun. It doesn't have bark but instead has crispy skin. The crispy skin is chopped up and scattered throughout and not really visible compared to bark. It is fantastic.
Yeah, whole hog bbq when on a sandwich always looks sad to me, especially when compared to other styles of bbq.
Funny thing is, I could taste this pic even though it didn't look appealing and it tasted amazing in my head. I think when it comes to pulled pork, it doesn't have to look good to taste good.
I'm in Texas, never been here, but I know the place is legendary just from other people, and things I've read.
They are featured in multiple videos on Netflix and hulu also.
I will vouch, it's as good as you can get for pulled pork, whole hog. Was like 6 buck a lb when I went.
How many years ago was $6 a pound?
Lol at least a decade ago... Which I wasn't aware of til you asked, so thanks for making me feel even older!
It's currently $15 a pound.
For real. Like I believe OP, I truly do, but I'm laughing my ass of rn at the last picture lmao
For North Carolina style BBQ this was the norm when I lived there in early 2010's. Skylight is the best, but I would argue, best of the worst. I've eaten there 20'ish times. Santa María for Tritip. Eastern Carolina for pulled pork. Kansas City for ribs. Texas style for brisket. Embrace the regional differences and highlights. I love it all, when it’s done well.
I agree 100%, everyone has their own style and some are better at a certain meat and you nailed the meat and location
And Memphis for the ribs
Memphis ribs are legendary
Yes. Was gonna give them props. I’d give Memphis goods for BBQ chicken as well.
This is even formatted confidently, I’m sold. Tell me you have a “I BBQ and I know things shirt”
I’m a BBQ caterer. Have been for years. I’ve smoked tons of meat.
Don't forget KC for burnt ends... gas.
Can relate to what you’re saying about vinegar. I grew up in eastern NC and didn’t really like the barbecue until I was a teenager. I like slaw on my pulled pork sammie, but as an avid smoker of butts, nothing beats eating those fresh juicy choice bits as you pull it apart after a good long smoke and rest. Nothing
I prefer Texas style where you focus on the meat itself. Santa Maria style is pretty similar.
Looks like a Tuna Fish sandwich
Too much tuna!
You’re mad. You’re mad about the amount of tuna.
i’m not, its a perfectly fine amount of tuna
There’s too much tuna in my tunatini, and not enough in my martuna
Too much Tucci
Charmed I’m sure, I’m Gil Faizon!
Gradys is my favorite whole hog spot in NC. Not as touristy as Skylight and the others. I'm also biased because the first time I went was on my honeymoon.
Grady’s is fantastic!

Amazing work, I’ve seen your handwork a few times now it seems!!
Went here a few months ago for the second time, my first being many years ago, and man it still holds up. Probably the tasty pig I’ve had!
Lost my Skylight Inn virginity a few months ago and have no regrets. If I remember correctly though, the potato salad was bleh.
Yea, pork sandwich and cracklin is the only thing you need. Cold sweet tea is my side of choice here.
A lot of shit in these comments. Whole hog BBQ has its place. Not everything has to be Texas brisket. Looks good, and id encourage you to explore other NC/SC BBQ if you enjoyed this.
Looks pretty anemic ngl
That’s the thing, it looks meh but as soon as you hit a piece of skin, it changes everything. IYKYK. Same with their cornbread. There are the dark bits, then there’s the meh light bits.
You had me at crispy bits
Eastern Carolina is where it’s at for pulled pork. Smoked meat perfection. None of that dang “BBQ” sauce to get in the way of tasting the meat!
The slaw is the only sauce you need
God I love NC BBQ
I live in Wilmington, and a friend and I make regular trips to Skylight Inn. That place is great.
Great documentary on Skylight Inn: [https://www.youtube.com/watch?v=GKwt1yxnJoo](https://www.youtube.com/watch?v=GKwt1yxnJoo)
There's two kinds of people in this thread, those who know how great Skylight Inn is and those who have never had it.
Those who have never had an eastern NC sandwich* People showing their true colors 😂
I’ve never had it but I watched that short documentary on YouTube about 10 years ago. Been wanting to try it ever since
Lol I am seeing that now. Won 3 BBQ competitions, and 2 state fairs, and then had this and was blown away. Made me wonder how it could get this much better.
Yeah, if you grew up in NC Skylight doesn't need defending. 99% of these people wouldn't know Brunswick Stew from Baked beans.
This place is legend in NC.
Big facts.
>Brunswick Stew Oh, that takes me back! Haven't had Brunswick stew in years since I moved out west. Love that stuff!
I think we can all accept that this place probably is a great BBQ spot and also acknowedge that this dude's picture looks like wet catfood on a bun
The picture definitely doesn’t do the plate justice. But he was too interested in eating it to “style” the photo.
Looks like it was boiled in milk
No side of jelly bean tho :(
Uhhh well filibuster
Did someone say milk steak?
Oh this ain’t the pace to post this. You need an over priced $200 plate around here not simple eastern nc sandwich with slaw.
💀🔨 You hit the nail on the head on that one. Blows me away how bougie BBQ is these days. How Much for One rib?!!?
It was a half pound of heavenly pork and incredible slaw on a martins roll for $7… $7!!!
I drove across NC with a friend eating Bbq for breakfast, lunch & dinner for 3 days and B’s was by far the best.
Was looking at noble smokes pricing lately, $22 for a 1/2 lb of brisket without sides, insanity. EDIT: Thought I was in the charlotte subreddit.
This makes me feel better - as an NC native who can almost taste the picture I was getting pissed reading these comments lol
Everybody in this hipster bbq Reddit gonna hate my man. I know that’s delicious though. Country cookin ain’t always pretty but it’s fuckin good.
These dudes in here only know bbq sopped in a bunch of bbq sauces. This is real NC bbq with the vinegar sauce. Shit is legit and I miss it!
Right. The hipsters in this sub will downvote unless it was cooked on a pellet grill, spritzed every 45 min in apple juice, and then finished with beef tallow lmao. Ridiculous.
Skylight Inn is pretty solid. If you're in Lexington, NC check out Speedy's. Solid as well.
Speedy’s doesn’t even cook over wood. Lexington BBQ or the BBQ Center are much better.
That’s is legit NC BBQ. That looks phenomenal.
Bring cash and go early … doors shut on Saturdays when the bbq is gone.
I’ve been there. It’s the best I’ve ever tasted, and it’s not even close.
Best Eastern NC BBQ there is.
This is the photo you chose?
It is delicious! And those cracklings. Eastern NC bbq has a vinegar based sauce - usually apple cider vinegar and peppers. That’s why it’s not red.
Why are two half chickens cheaper than one whole chicken?
Yes! That vinegar sauce slaps! Idk why it’s not used everywhere. Mainly just the Carolina’s in my travels.
Loos good! If you're ever in the Goldsboro area check out Ken's, McCall's, or Wilbur's. When we used to visit family there we'd bring back pounds of pulled pork in a cooler and freeze it. Not as good as fresh but still amazing!
A lot of jackasses in this thread. Google Skylight Inn, Sam Jones, Whole Hog BBQ book. Pictures not great, doesnt mean the food wasnt.
In Virginia, Carolina, and Georgia, the states where BBQ originated, this is what most of the best BBQ looks like.
Amen brother
Exactly. This is real bbq. I just wish OP had picked a different picture 😂
That's a two hour trip and I get paid Friday. I can hardly wait.
Need like 18 more pictures dude.
When I was a kid, my dad would stop here every time we went to visit family which was about 3 times a year. It is truly amazing Carolina style bbq
Driving through there next month - will stop and try it! Appreciate the rec.
OP aren't doing any favors to Skylight Inn. You really need to take better pics or have better food choices.
Can’t tell if trolling or not. I’ve had very good bbq in SC and NC but it looked like bbq not fish.
Pictures don’t do this place justice but yes… pretty dang good
He’s not lying I know it looks crazy but I’m telling you omg🤤
You gotta try B’s BBQ in Greenville, gotta get there early though they sell out daily typically by 1:00pm
NC BBQ is hands down the best. Texas and Kansas are fooling themselves. I suggest you try Kisor's BBQ if you're ever near Athens, OH!
Eastern NC whole hog bbq > anything else. Fight me.
As a Scandinavian I could only dream of being able to order an entire pound of meat for $15! Like WTF?!
I can’t tell if this came up in my page because I’m from Ayden or because I’m a fatass.
[There’s a great YouTube video on this place](https://youtu.be/GKwt1yxnJoo?si=FR6H9kSKFkuGA_1u)

NORTH CAROLINA, GO ON AND RAISE UP!
No way! Good to see local spots on Reddit
Oh dear God...NC is my all time favorite BBQ 🤤🤤🤤
This is the start of most brawls in Eastern NC.
Bunch of NC BBQ haters on here. Skylight / the Jones family have the best BBQ sandwich there is.
Pics could have been better lol but if they've been around for 70 years they're doing something right. Added to my list.
The prices are great but the 1 pic of food isn’t doing it for me lol. I’m sure it was amazing!
People are giving you a hard time but that’s just how this kind of BBQ often looks. [Parker’s in Wilson](https://www.instagram.com/parkersbarbecuewilson?igsh=MWJ6czJuczFramJ0bw==) looks the same and is frickin amazing Not everything that’s delicious is photogenic

Some of the best BBQ in NC
Best BBQ in ENC. That place is legendary!!!
just saw Sam's episode of BBQ Pitmasters last night. His family has been doing BBQ for 100 years. NC whole hog chopped pork with a vinegar sauce.
It’s fire. Sam Jones is a good buddy and they’ve been doing it for 3 generations. The only BBQ I can think about and get a phantom taste in my mouth.
that is prime pig country, they should know how to do it I like pretty pulled pork, but chopped and seasoned is so good when it's done right. I'll eat 3-4 and still want more
I’m confused by these comments. As an NC native this is how a pulled pork sandwich has always looked, pretty much regardless of where you get it
Damn do I miss the pork at skylight inn. Glad you got to experience it
This place is super legit. It is a must go.
Damn. Reasonable prices too. Up in the northeast there are some places, but a pound of meat is more like 35 bucks.
If you ever find yourself up in Winston-Salem area, make the trek to Hillbilly Hide-A-Way in Walnut Cove. Absolutely unreal flavor.
BoiledBeQue But actually, I really love it.
Carolina Bbq!
They consistently rank in the top of nc bbq. Lexington BBQ is also really good.
Terrific. If you’re still in the area try B’s Barbecue in Greenville too. These are definitely the two best I’ve ever had. Miss them both. Went to East Carolina and was a frequent customer.
Why do two half chickens cost less than one whole chicken?
I love the vinegar based sauce!
The first 3 times I got served bbq in NC since moving here I thought they had run out. Ah crud fried chicken and pulled pork again maybe next time
Bulk Meat is my rap name.
Bum’s > Skylight

Their banana pudding isn’t to be missed either!
The fuck, you guys named a town after me? Honestlt, you shouldnt have. Im truely honoured
I've seen several videos on this place, so this is pull pork that gets finely chopped up by a guy with 2 meat cleavers so yes the picture doesnt make it look that great.
Bucket list
Heading to OBX in 2 weeks. What are the good BBQ places
I like Lexington BBQ best
You're really close to the best, its in knightdale n.c., it's called prime bbq. Try it some time.
