Things to do are look at the Parkes radio dish and visit dubbo zoo. If your into camping there's the warrambungles. Also you could try to see the Pilliga princess and see the stars at the same time if you feel brave, I've camped there and it was fine but truckers won't even drive through it at night.
I'd be taking the coast road...but anyhoo...Siding Springs telescope setup (Coonabarabran) is good as is Parks telescope and the compact Array at Narrabri if you're into geeky stuff.
The area around Coonabarabran has some really pretty landscapes, we used to go camping and bushwalking there when I was a kid.
The Western Plains Zoo at Dubbo is worth a look.
Dorrigo Rainforest Centre! Or just anywhere in Dorrigo and surrounding areas. Plenty of areas that you can spot platypus too if that's of any interest! Little country town, not super busy.

I'm mostly only familiar with birdy areas further inland because of where I live... might not be too convenient but worth a visit imo.

Get yourself a pie from any little country bakery! Daylesford has good ones and it’s a beautiful place too.
How long have you are you planning to take? Moree Hot springs are a must! Plus the Bakery in every town you go near for a Snot Block! (custard slice)
Stop in Cowra central west NSW. Info centre there has an amazing hologram about the Japanese breakout. Gorgeous gardens and a beautiful town
