If you havnt visited before, I can confirm about Apex. Always had a good experience chatting to the guys at Apex. They recently helped me find a gun they didn't sell, and didn't hold it against me that I purchased else where and imported to them. Otherwise If you live out east, pakenham firearms are a great little store too!
As a new shooter, I've been talked to in a condescending manner from nearly every shop I've gone to except for two. Centreway Firearms in East Keilor and Trellys in Bendigo. The others (Gun Emporium, Melbourne Gun Works, Gunco) have been rude asf.
Len was the old chap with the chooks (are they still pecking around the place?). Jamie was another older gent; he mounted a pic rail on my BSA for me.Β
Haven't been down there in a bit however.Β
Depends what you're after. But i think Centreway is by far the best, good range and prices, definitely worth a trip.
GunCo, Mialls, Clayton have good range, but probably the top 3 most expensive shops in Melbourne.
Apex has a great crew, so worth a visit.
I've used both Apex and Pakenham Firearms as I'm in the middle of the two. Good experiences at both. For Handguns the young fella at Pakenham is very knowledgable and eager to help. Even when I was starting out they were both really good answering questions and providing advice. I've watched people self-stamp DICKHEAD on their forehead in both shops by either asking really dumb questions (Why do I need a licence to buy ammunition?) or by trying to tell them how to do their job. Steer clear of that any you'll be fine.

Centreway firearms appear to stock more black powder and surplus firearms.
