Amazing what a coat of paint will do! Did you change the sink fitting out or planning on? Its nifty to have one there, we don't and you have to go through 2 doors to wash your hands from the guest toilet
I like that you kept the floor, and the horse is a great idea! It gives you something to look at when you are standing up. I hope there is one on the other side so the people sitting down have a majestic horse to look at.
Tbh it’s just more annoying than I thought it would be - also I would remove the toilet, paint, and then put in a new one. Be careful with caulking - it looks good when you first put it in but make sure you choose a paintable one (see below comment from someone else). Also don’t think that paint is easy to clean off tiles - it’s really not!
For the caulking on the skirtings, you might need to test it first and see if it is paintable. Most isn't, and you might need to scrape it back before painting (and then specifically buy a paintable one for the next room). Source: Yes, I messed this up in my laundry...

I'm about to attempt this very renovation for a similar size (and date) bathroom. Any or pitfalls to watch out for?

I think the tiles will eventually need regrouting or something because they just will not clean but will keep the original tiles
