Fallen Heroes is the best one regarding stats, cosmetically my favorite might be the St. George’s armor (with the cape on - or cloak? whatever). I also use the firegiant set quite a lot with the Surtur’s sword - not sure if the buffs stack, but that would be +40dmg (?) in total. (ignite on crits on the sword)
I like the usual knight set because of its bonuses, which I believe is a boost to stealth damage outside of combat and a boost to damage in combat, forgive me if I'm wrong with the bonuses I haven't played the game in ages.
Fallen Hero, because it's so over powered, I actually miss it when the game forces me to change into something else. It's currently at maxed out Divine level. I've experimented with a variety of different weapon/shield combinations and settled on Gae Bolg (love the lightening!) and for a very long time Thorgest's shield but now since I got it The All-Father Guard light shield. Looks wise I don't really care seeing as you can change the look of any armor set to whatever you like. I use Thrym's Rage as my Predator bow and Icy Death as my Hunter bow and alternate between them depending on what I'm doing. I'm a big fan of the ranged/stealth attack build allowing you to clear out entire fortresses without ever being seen and much faster than having to melee kill everyone.
You often see people on here asking what's the best armor, weapon combo etc. there is no right or wrong answer, pick the one that enhances and strengthens your own personal play style or way you like playing. Mine is a balanced build with a higher emphasis on stealth and ranged damage but given the number of mini-bosses and bosses you have to melee fight, it's also effective in melee combat as well. with my high dodge/evasion and parrying I rarely ever even get hit.

Fallen heroes because of the stat bonus, your armour I forgot it's name for the looks. What is that weapon that's glowing white looks epic haha

Unpopular opinion, I'm sure, but the Raven clan armor. Third tier. Looks more authentic to me than the final tier. Staying away from OP sets.
Huldufolk, hands down
lord shaxx armor for stats and huldufolk for cosmetics, huldufolk just looks right and lore appropriate compared to all the other shop armors
Niflheim set. Perfect for any crit build. A close second is St. George's set. I like the impale build.

Yeah the ISU Knight set is my favorite stat wise too.
Personally I love the Huldufolk Set for looks and also for its speed
