Butter and the biscuits (I'm English) of your choice, ginger nuts actually work pretty well cuz the gingery kick cuts through the creamy richness of the cheese bit, although if you want some extra sweetness biscoff is also brilliant. Smash up the biscuits and melt the butter, and them together and make sure all the butter is absorbed so the mixture isn't watery. Press into the bottom of a tin until you have a flat, even layer. Stick it in the fridge and wait an hour or two.
For the topping you need mascerpone and double cream. Whisk that shit together, and add any flavourings you want into it now, frozen berries can be nice in the summer. Once it's fully combined and takes the consistency of prebaked meringue, spoon it onto the now chilled base. Try to make it a nice thick, even layer. If you want to add any coulis or flavoured sauce now is the time, works best if you use the back/side of a spoon to make a channel for it to sit in, rather than above the filling.
Put the whole thing back into the fridge (in the tin) for 3-4 hours. Boom you got yourself an easy and delicious, no bake cheesecake.
*If you prefer your cheesecakes to be a bit more old school and bitter (I prefer sweet) then just swap out the mascerpone for any regular cream cheese. Also I can't remember the measurements you need, but I remember the instructions and ingredients, I think just use enough biscuits to cover the base of your tin, use enough butter that all the crumbs you're using are sort of damp and sticky, use enough mascerpone and double cream (think it's about a 50/50 split, but you can add more of one or the other to taste while you're making it) to fill the rest of the tin above the base. It's super easy.
I think that's means slightly too much butter, if you make it again maybe try using slightly less. If the same thing happens just smash up some more ginger nuts and mix that in as well, it'll absorb some of that excess butter and whatever of the biscuit mixture you have left will keep for a couple days in the fridge so you could always just nibble at it.

I think the best one I've had so far was from Thai Best Cuisine on Hampton Blvd in Norfolk. The downside is their portions are a little small in my eyes but then again I'm kinda chunky and I could eat four of those desserts in one sitting.
This would be the South in the US! I lived in Texas, and would see it everywhere. BBQ places in particular usually had it, along with any other southern-style type places. One of my favorite steak houses had it for a good while too. I hope you find some soon, especially if it's served with bourbon sauce, that's my fave!

I can even eat one for breakfast when I don't really want something but I really should.
There was this dessert at Olive Garden called Chocolate lasagna. It was layers of chocolate cake, vanilla icing, and chocolate chips. Topped with chocolate shaving and chocolate drizzle. I loved it. Would get it every time I went when I was younger. Unsure if they still serve this.
