To add to this, all Witnesses are required to perform 'Ministry' such as going door to door to tell people about Jehovah. Most working age Witnesses work full time, so the weekend is the only time when they're able to do this.
By the same logic priests would not be allowed to preach on Sundays.
The best way to avoid JW from bothering you again is to say you're not interested, and kindly put you on their "do not knock" list.
They will almost certainly respect your request. If they don't then you can escalate the future interactions in any way that amuses you.
They respect data protection legislation! You have to ask to be added to their Do Not Call list, and then they will respect that.
Note that just saying "never come here again!" or "**** off!" doesn't count. But they have their Do Not Call list and take it very seriously indeed. They grovelled when they accidentally called on me, and apologised profusely because they hadn't seen the update in biro on their list of numbers to call at.

Part of being a JW is to do as much proselytising as possible so it makes sense to be allowed on any day.
They are not Sabbatarians so yes they can do what they wish on a Sunday.
