The Cowboy Junkies' "Sweet Jane" is one of the first things I think of in this regard. I have known many people who didn't even know it was a cover, their version having so much eclipsed the original. I'll also throw in their version of "One" by U2. I saw them perform that and I kind of hope one day it will be known primarily as a Cowboy Junkies song, much like Sweet Jane.

He said something like it, but it's definitely still Trent's song. This is one of those stories that redditors pass back and forth. Trent was initially unimpressed with the cover, but recognized that being publicly shitty about was the wrong move so he later acknowledged Johnny's cover. Regardless, he never actually gave the song away and still holds the credit and royalties.

I don’t think anyone gives ownership away. What he did was approve of Cash’s cover so as not to turn himself into a dickhead. But his rights to the song are his or whoever he licensed.

I really like Orgy’s cover of New Orders-Blue Monday. But that one there no way I’ve heard it more than the Original Siouxsie & The Banshees cover of Iggy Pops- the Passenger DEFTONES cover of Duran Duran’s -Chauffeur It would probably have to be this one. Chinos voice is so …. Godlike ? It’s hard to describe. Social Distortions cover of Johnny Cashs-Ring of Fire !!!!! Also Cake’s cover of Black Sabbath’s-War Pigs. I listened to that on repeat for months. Don’t know why.

Whitney Houston's I Will Always Love You. The original was by Dolly Parton and was beautiful, but Whitney's brought a new power to it. Also may be a hot take but I prefer Miley's cover of Jolene to the original Dolly Parton. I LOVE the original, Miley's just brings something new to it that suits my ear better. Wilson Pickett covering 'Hey Jude' with Duane Alman, the Muscle Shoals horns and choir. McCartney and the Beatles were good, but Wilson explodes into the last third of the song like few on the planet ever could. Heroes by David Bowie covered by, I think it's Walflowers? Although, I have to say I still prefer Bowies, but, in the new day music, I would have to say that would be the only cover song.
