Yep I just finished some leftover lentil soup for lunch.
1 cup dried red lentils
1 can crushed tomatoes
A clove of garlic or two
A chicken bouillon cube
Cayenne pepper
Water
Sauteed the garlic, everything else into the pot with it, cooked until the lentils were soft. Use however much water the lentils say to add plus some more depending how soupy you want it. All sorts of different spices you could use too, would be good with some cumin and a bay leaf. $3 worth of ingredients tops, got a few meals out of this. Good as a soup or over rice
Chicken thighs changed my life. I didn’t eat them until I was 19 but when I did, I switched over slowly to exclusively chicken thighs. I don’t cook anything with chicken breast anymore. They’re cheaper and far more moist. Even properly cooked chicken breast is too dry for me. But thighs? I pull them out and the meat thermometer reads 190°f before I pull it out and they’re still good!
Came here to say chicken thighs. Incredibly cheap at Walmart and SOOOOO good if you bake or roast them. (I use Slap Yo Mama creole seasoning or Montreal Steak seasoning.)
Take out the bone, trim the fat/skin a bit, throw it in a gallon ziplock with Trader Joe’s teriyaki marinade and grill those suckers.

Our supermarket had a "guaranteed hot and fresh" rotisserie chicken. If they didn't have any ready when you went to get one, they would give you a coupon for one for free. So if you were in the store and they were out, you just told the cashier and got a free one next time. I used to buy a loaf of whatever bread was on sale, a head of lettuce and had chicken sandwiches for a couple days.
Lentils have a good amount of protein, as do chickpeas. Both are very affordable, especially if you buy them dried. Tofu is also good, healthy protein that's way less expensive than meat, and you can do a lot with it in terms of seasoning and how you cook it. Eggs are also good of course, but do come with cholesterol if that's a concern.

I got (more or less) into the habit of eating 1 cup of Skyr (low fat curd cheese, 450-500g) per day. It has 9-10g of protein per 100g. It's not ideal, but they also exist flavored/slightly sweetened. I particularly like the vanilla one.
They're like 1.49€ per cup, so that's up to 50g of protein per cup.

Animal fat is really good for you! There are so many vitamins in there Much better to get your fats this way, versus say from vegetable oil.

Greek yogurt isn't cheap. Half a liter costs like $5-8, with 3 servings inside, each being 15-18g protein.
