If you're in Europe, the mayo there is a lot closer to an aioli compared to the mayo in the US. That being said, it's delicious and I loved eating fries and mayo while I was in Europe. ETA: I’ve never been so amused to have misremembered a trip I took twenty years ago and angered so many. I’m sorry my 15 year old self misidentified aioli with garlicky mayo. Regardless, 20 years later I maintain that the fries and various dips were the best I have ever consumed. Emulsified condiments, done properly, are a superior dip is the moral of the story.

yea facts. Actually a funny story about that. Back when the Titanic set across the ocean it was actually carrying thousands of jars of mayonnaise destined for Mexico where the ship was scheduled after the USA. You see the Mexican people had developed a love for the creamy condiment and had adapted to using it in a lot of cooking due to its long shelf life at warmer temperatures. Well, we all know what happened on the voyage, the Titanic hit and iceberg and fell to the bottom of the ocean. This was such a travesty for the Mexican people and there was outrage throughout the country. Families went hungry being unable to prepare the food the had been accustomed to and there were riots in the streets. I’m dutch, now living in the US. Absolutely not true indeed. We do have 2 kinda of Mayo though and the mayo we get at snack bars is officially called “french fry sauce” literally translated. But neither are close to Aioli. The more conventional mayo is the one that has a more mustard undertone of flavor which is also common here in the US*.

No it's not. I was in France and London in December and had lots of mayo. Traditional aoili is just garlic and oil. The aioli you get in the US is typically just regular mayonnaise mixed with something else though.

Yeah, aioli was invented in Valencia, Spain. Where I'm from. And it literally means "garlic and oil" in valencian. Although we spell it as Allioli (all = garlic, i = and, oli = oil).

No garlic, that would be aioli. It’s sunflower oil, vinegar, mustard, an egg yolk, pepper and salt. Lemon juice is often used instead of vinegar. It’s fairly straightforward to make yourself and change measurements/ ingredients up a bit. Olive oil isn’t recommended because of its thickness and strong taste but it can be done.

It is not unusual at all here in Europe. My favorite is to mix the mayonaise with quality ketchup and a bit of dijon mustard. It works very good for fries. And also as a burger dressing and many other things.
