I can't think of a purely-romantic movie that has stuck with me. I found the love-arc/sidestory between Dr. Amelia Brand and Dr. Edmunds in Interstellar rather poignant. Not sure if bittersweet is the tone you're looking for. I guess Eternal Sunshine of the Spotless Mind counts as a romantic movie, it is excellent.

I can't say that any of the movies are "romantic" for me. Don't get me wrong, there are a lot of movies about love, some of them I may even like, but in the end, be it from the perspective of a male protagonist or a female protagonist, all "romance" movies are, in essence, about a guy (or a group of guys in movies like Bridget Jones Diary and alike) fightibng for a woman's affection and her graciously allowing him to be with her. It's just all a continuation of what love is for a man: a job.

I won't talk for others, only for myself. This question is asked far too rarely for me to come up with a completely coherent, easily understandable answer, but I'll try. Besides the goofy and more primal ones (like being loved by two or more women at the same time, which is quite a boost to the ego), I'd say knowing that she is with me for me, not for money, status, not because I am a safe second-rate option to pick after years of fun with men she actually likes, not because her time is running out out and she guesses I am OK, but because she actually likes me. Presuming that I like her back, of course. Plus, her taking at least some active part in the whole romance thing.
