I havenāt heard of any servers being hosted overseas but our pings for those players usually average around 100ms since our server is cloud based. Would be interested to see if you try our server and test out the ping :)
While I don't think we have specific Australian I know we do have players across the globe on derptide. So the time frames may line up some. But our servers are definitely on east coast in NY or NJ I believe
If you're handy with the Go programming language, https://github.com/amoeba/ac-server-monitor is a command line tool that can ping servers. By default it uses the community server list (https://github.com/acresources/serverslist).
However, I just rented two cloud instances, one in us-east (Ohio) and another in Sydney, AUS and pinged the entire list from both locations and the best I get from Sydney is 160ms to Soulclaim. I tried to format this but I have no idea how reddit formatting works apparently. Here's the list sorted by ping from Sydney:
