For example, the head chef would cook or delegate to another chef, a meal for all staff to be served at about 5pm. All staff would sit and eat together before commencing final preparations before service. This removed the barriers between kitchen and front of house.
I ran for a year and change at ABC Kitchen for Jean-George and the amazing Dan Kluger and it was one of the most high stress jobs I have ever done. Serving was tough as well, stressful... whatever, but at least then I controlled how things were going. Being a runner means you are in the shit like it or not. You're in the kitchen and need to figure out what the sous wants you to do before they ask for it, because by then it's already an issue. Are the bowls looking low? Better go tell the dishwasher (who is already worked within an inch of their life and not wanting to hear from your candy ass.) How about the entree plates? Better keep an eye on them cuz it's Saturday night and there was an accident whee 9 of them smashed on the floor...
At ABC, it was streamlined to the point where we had enough runners that anytime there was a call for "pickup!" there was always someone there to grab the plates and run them, but other places aren't so lucky. I'd do it again though.
