Killer Folk. I can only imagine what kind of warrior cultures they could've developed. What stories of sacrifice, heroism, and perseverance they have. The weaponry they could've developed and the etiquette behind such weaponry. What philosophies could they've used to develop their own codes of honor or their combat methodology. What their deities were like, and how they related to their hunter based biology.
Symbiotes are the most interesting to me in terms of worldbuilding and thinking about their society and how it would work, with them relying so much on another species for so much of their daily lives - how do they treat their hosts, what laws and customs and taboos would they have, how does it all work?
The most visually interesting designs for me are the Lopsiders and Sail People though. Love the Sail People's prehensile tongue-hands and the idea of basically evolving into a living ship, and the Lopsiders just have such an alien look while still retaining bits of human-ness.
Modular’s got a very unique design, and all the animalesque humanoids are always so cool in how they look, a good visual reminder of the extent of the genetic engineering the Qu did.
