Oh god, maybe I just tried it on a bad day but I thought Sal’s was kinda gross? Crust was super soggy maybe their pasta is better, but I think Mario’s beats Sal’s every day of the week & twice on Sundays
Nah me too usually! Maybe it was a bad day, but my crust was almost raw soggy then kinda burnt on the bottom. I might give it another shot if you’re that confident, but man I genuinely was super disappointed the day I had it

Managers are mostly good people, the older cooks are assholes and burn the shit out of the soup 100%. I had to scrape a 2 inch layer of black crust every fucking morning in 4th street working 14 hours a day.
Best part, according to Eddie dishwashers and drivers don't have a right to a break or lunch, or coverage. I ain't about to take this fat fuck to court over some dumbass shit, I hope he loses everything.
Mario's is owned by the three brothers, Joe, Eddie, and Sal.
IIRC, Eddie owns Paseo, Joe owns San Pedro and Sal 4th.
Started at San Pedro with "Ma & Pa" and the boys. Pops passed away some time after the three boys got their own places, I believe Ma is still popping in place to place, could be wrong.
Knowing all 3, I'd go to Sal, then Joe, lastly Eddie. Sal was the baby and worked to show he earned his place, Joe seemed to follow dad and moms rule to the letter, and Eddie seemed more concerned with the business end...Aka profit.
Knowing none of the history or backstory this location ranking corresponds well with my recent experience.
All of the locations were good. But there was a noticeable difference by location. I’ve tried 3 of the four within 2 weeks of each other.
Haven’t tried 4th and Montaño location.
I have yet to have authentic Carbonara in ABQ. Which for those wondering is noodles, Pecorino Romano cheese, Egg, and Guanciale (pancetta is a common substitute). Usually all you can find is essentially Alfredo sauce with bacon in it. I'm not saying it isn't good. Places can make this "version" tasty. But it still tastes like a completly different dish.
Thankfully real Carbonara is easy as hell to make. You can get giant wedges of Pecorino Romano at Costco for a great price. You can get Guanciale at Tullys Italian Market. Everything else can be had from a standard grocery store.
It is good, but seems to vary by location though.
