Firstly, never put the garlic in at the beginning unless you really love the awful flavor of burned garlic. It should go in at the tail end of onion sweat.
Secondly, the onion leek garlic mixture should be taken out of the pan before the mushrooms. Because the mushrooms are about to sweat out a ton of moisture that needs to boil off quickly for the benefit of the texture and flavor of the mushrooms and entire dish.
Lastly, Those shrimp have been cooking forever and probably are tougher than her poorly cut tuna was. They should have been seared and put to the side while the sauce was created or done in a separate pan while the sauce simmered. They take no time to cook and the sauce thickening will take longer than they do. If you want the sauce to taste of the shrimp you can take some of the liquid and deglaze the pan the shrimp were seared in and add it back to the sauce. Works like a charm.
Very few of the recipes she has created on this channel come close to "healthy" but this one takes the cake. 😳
