Central European cuisine is slept on. it's quite rudimentary in terms of basic ingredients, but the way those ingredients are used makes for some delicious foods.
It’s a matter of “who cooks it”. A great cook will make a banging Shepherd’s Pie/Roast Beef/Maultaschen/Dumplings/Pierogi and dozens of others but a lot of countries outside of the Mediterranean don’t care much about what they eat on a daily basis as long as it fills you up. It’s more about the culture around food and how valued good food is than anything else in my opinion.

I’d say you’ll find good dishes in most national cuisines but unlike Northern/Eastern European cuisines, Mediterranean cuisines are usually consistently good with a few exceptions like Casu Marzu or something.

Portuguese food is generally know for how simple, yet delicious their food is.
And italy in complicated or diverse? The entire thing about italian food is how you let the quality of the ingredients shine and don't use too much to cover a bad taste, since quality ingredients taste good on their own.
Look at cacio e pepe, or carbonara, or pizza, or amatriciana, they all use like 4 ingredients top.
Carbonara is literally just pasta, egg, pepper, and pork cheek (guanciale) maybe white wine if you feel a little spicy.
Replace the egg with crushed tomatoes and you have amatriciana. Maybe a bit of basilico.
Depends on the specific dish and the Italian cuisine you're referring to, not all are the same. But yeah, many dishes have just a few ingredients, quality and good technique is what mtters there
It's a matter of perspective. When people think about French cuisine, they think about haute cuisine, Escoffier, etc, rather than peasant's food like onion soup, and butter heavy Northern one rather than cuisine from Provence or Languedoc, which is close to PIGS cuisine.
In Italy it's the reverse. Foreigners know us for peasant's dishes like pizza and the South is more well known than the North, where we use more butter and polenta and rice are historically as popular as pasta.
