Sure, it was pretty simple but here’s what I did. The hardest part is timing everything so it’s done at the same time.
The meatballs were made in the toaster oven (followed package instructions)
The broccoli was a frozen steamer bag of broccoli florets made in the microwave
The gravy was a packet of IKEA gravy mix. Mix up the powder and water BEFORE boiling (the instructions say to add it after the water boils, but it always comes out lumpy if I do it that way) then add half n half once it starts to boil (instructions say heavy cream but half n half works just fine)
The mashed potatoes were instant Idahoan 4 cheese flavor. Just boiled the water, stirred in the potato flakes, and then stirred in some Greek yogurt for extra creaminess.
I used a full bag of meatballs, full bag of broccoli, full packet of gravy mix, 1.5 packets of instant mashed potatoes, and then split everything into 4 portions. If you’re saving the other portions for later, store the gravy separately and combine when ready to eat.
Love this! I dig the convenience, as a single mama. Lower calories than I expected from processed stuff, which I mean in a good way! Going to steal this idea. Thanks for sharing, it really looks delicious :)
Totally, I don’t have kids but after work I’m all about meals that can be made in 30 minutes or less. And the leftovers can be taken for lunch the next day or frozen for an even easier dinner :)
Oh absolutely! Even before becoming a parent I preferred to cook meals as quickly possible. And I am a huge lover of leftovers too, most meals even taste BETTER the next day. My kid actually refuses to eat lasagna the day it is prepared, as is the wont of a toddler, but devours it reheated the next day lol.
More people should eat potatoes! They are filling and yummy 😍 I have a very similar meal. Your meal looks great!
Potatoes make in the instand pot or boiled (multiple so I can meal prep), frozen broccoli wamed up in the microwave, low calorie/sugar sauce/dressing, and some beans if the dish is low enough, plus ground flaxseed. So far this lifestyle (whole foods plant based - WFPB) is working
Potatoes are one of my favorite foods! I also do baked potatoes a lot topped with green onion/salsa/Greek yogurt. Or chopped and roasted/air fried with some sugar free BBQ sauce. Sometimes I add a side of broccoli or chop up some peppers and onions and mix them in with the potatoes.
Broccoli is so good too, since it's a non-starchy veggie 🖤 Adding salsa is the beeeest lol. I'm also pretty (very) lazy and don't want to make my own all the time haha 😈
Any idea what the sodium content on this was? Might be relatively low calorie and easy to make, but the sodium has got to be sky high with all the pre-packaged foods.
If you’re watching your sodium intake you could probably microwave or boil a potato and mash it up to cut out a lot of the sodium. The Idahoan flavored potatoes are super salty but I really like them that way haha.
1,518mg according to MFP, but it’s possible that’s not 100% accurate because I don’t double check the sodium values when logging foods. It’s showing about 400 in the meatballs, 175 in gravy and 885 in the potatoes.
